Happy belated birthday, Valerie! It brings a smile to my face that you made this for your birthday dinner and it turned out well. Yeah, it really is a shame how expensive oxtails have gotten. They used to be very affordable.

I made this for the first time yesterday as my birthday dinner. It definitely didn't take me 15 minutes prep time, lol. I did only marinated it for 3 hours. Then...after hours of prepping/marinating/frying, and waiting for it to stew, it was done, and oh my goodness! I was in heaven and happy I could make something that delicious! It's a shame that oxtails here are so expensive or I would definitely make it often. Sooooo good.

Hi Anne, if you use fresh tomatoes and don't add avocados to the portion of the salad that you're storing, then you should be able to store the salad for about a day or two. You can also make a reduced portion of the salad by adjusting the servings on the recipe card.

I am eager to make this as part of a meal for a new friend from Uganda. You don't recommend storing any left overs. Would it be ok to just add the avocado before serving and store any leftovers? I can see why left over avocado would not keep well.
