Ingredients
4scotch bonnet or habanero peppers (chopped)
1medium onion (chopped)
6clovesgarlic
6scallions (chopped)
10sprigsfresh thyme
1tablespoonfresh ginger(grated)
1lime juice(freshly squeezed)
1/4cupwhite vinegar
1/4cupsoy sauce
1tablespoonallspice(ground)
1/2teaspooncloves(ground)
1teaspoonnutmeg(ground)
1teaspoonsalt
1teaspoonblack pepper
1tablespoonbrown sugar
1/4cupcanola or olive oil
Instructions
In a blender or food processor, combine all the ingredients. Adjust seasonings for taste.
Store in refrigerator and use when you want.
Notes
Can the jerk sauce if you want it to last long; there are videos on YouTube that will teach you how to properly can foods. The sauce is usually good for about 4-6 months when properly canned.
