BBQ-Flavoured Baked Plantain Chips

Plantain chips are a popular snack in Ghana and other African countries. I also see more food stores in Canada (at least in Ontario) selling plantain chips, which I think is great. However, I still like to make my own plantain chips so I can make them baked instead of fried. I also like making my own plantain chips so I can make them in flavours that I can’t find in stores.

How to Make Baked Plantain Chips

Preheat the oven to 350° F (175° C) and prepare a flat baking pan such as a cookie tray by spraying it with cooking spray. Remove the peel from 3 green, unripened plantains, the greener the plantains, the crispier the chips will be. To remove the peel from a plantain, place the plantain on a cutting board and use a chef’s knife to cut off each end of the plantain.

Slice the plantain peel lengthwise with the knife then use your fingers or the knife to peel off the plantain skin. Cut each of the plantains in half and slice them into thin slices using a mandoline. You can use the knife to slice the plantains if you don’t have a mandoline. Place the sliced plantains in a strainer, then wash them under running water. Put the plantains in a mixing bowl, season with 1 teaspoon of salt, then set aside.

In a small mixing bowl, combine 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of white pepper, 1 teaspoon of kosher salt, 1 tablespoon of chili powder, 1 tablespoon of paprika, and 1/3 a cup of canola oil. This makes a slightly spicy barbecue seasoning. If you don’t want your plantain chips to be spicy, reduce the chili powder and/or add 1 tablespoon of brown sugar to the seasoning. Mix the ingredients together with a spoon until smooth. Pour the barbecue seasoning on the plantain chips and mix gently, making sure that the plantain chips are evenly coated with the seasoning.

Line the plantains on the baking pan and place the pan in the oven to bake the plantains. Unless you have a really big oven, you will likely have to bake the plantains in batches. Bake the plantains on one side for 10 minutes, then flip and bake them on the other side for another 10 minutes. Baked plantains don’t keep as well as the fried ones so plan to consume them on the same day. Enjoy!

  • Line the plantains on the baking sheet and place the sheet in the oven to bake the plantains; you will likely need to bake the plantains in batches.
  • Bake the plantains on one side for 10 minutes then flip and bake them on the other side for another 10 minutes.
