Mixed Berry Baked Oatmeal

The weather’s getting chilly, which is the perfect time for warm, healthy baked oatmeal. This mixed berry baked oatmeal is the perfect make-ahead breakfast for cold, busy mornings. It’s easy to make and is nutritious and delicious. You can use any kind of berries that you want to make it. The berries can also be fresh or frozen. I like to add almonds to my mixed berry baked oatmeal, but you don’t have to. It still tastes good without the almonds.

This baked oatmeal is best served warm or at room temperature. It can be eaten with yogurt or maple syrup; I like serving it with both. This baked oatmeal will generally last for about a week in the fridge. It can be rewarmed in the oven or the microwave after being stored in the fridge. I’ve never stored it in the freezer, so I’m not sure how well it turns out after being frozen.

How to Make Mixed Berry Baked Oatmeal

To make this mixed berry baked oatmeal, you’ll need the following ingredients: 3 cups of rolled oats, 2 cups of mixed berries (I used fresh blueberries, raspberries, and blackberries), 1 cup of almond milk, 3 large eggs, ½ cup of sliced raw almonds, ¼ cup of honey, ¼ cup of maple syrup, ¼ cup of vegetable oil, 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, 1 teaspoon of vanilla extract, and ½ teaspoon of salt.

In a medium mixing bowl, combine the milk and eggs and use a whisk to mix until smooth. Add the honey, maple syrup, oil, and vanilla extract to the milk mixture and mix everything together. Combine the rolled oats, baking powder, cinnamon, and salt in a separate bowl. Pour half of the rolled oats mixture into a greased baking pan (I used a 9×14 inch baking pan that’s about 2 inches deep). Sprinkle about 1 cup of the mixed berries onto the oat mixture (gently press the big berries about halfway down into the mixture). Pour half of the milk mixture onto the oats and berries, and top with some sliced almonds.

Repeat the layer by pouring the remaining oat mixture on top, then the mixed berries (press the big berries halfway down into the mixture, gently), the milk mixture, and the sliced almonds. Bake in a 350˚F preheated oven for 35 minutes or until set. You can set the stove to low broil briefly (about 1 minute) to make the top crispier and more golden brown. Serve with yogurt, maple syrup, or both. Enjoy!
