Tropical Fruit Granola

I recently came up with this tropical fruit granola recipe and I can’t praise it enough.  The mix of tropical fruits and nuts is simply delicious. It’s like having a bit of summer in a bowl. This granola also have a unique flavour. It is definitely not your typical, everyday granola.

 In fact, one of the reasons why I like making my own granola is the unique flavors that you can come up with. I’ve even turned my husband, Jason into a homemade granola superfan.  He gets really excited when I make this and other homemade granola, like this cranberry and almond granola. You can have this tropical fruit granola on its own as a snack or with yogurt. I also really like eating it with almond milk, like you would with cereal. 

How to make this granola

To make this tropical fruit granola, you will need the following ingredients: 3 cups of rolled oats, 1 cup of dried mangoes, ½ cup of dried pineapples, 1 cup of coconut flakes, 2⁄3 cup of  macadamia nuts, 1 teaspoon of ground cinnamon, ½ teaspoon of ground ginger, ¼ teaspoon of ground nutmeg, ¼ teaspoon of salt, ¼ cup of brown sugar, ½ cup of honey, 1⁄3 cup of canola oil, and 1 teaspoon of vanilla extract. 

Preheat the oven to 275°F (135°C). In a medium mixing bowl, pour the rolled oats, dried mangoes, dried pineapples, macadamia nuts, coconut flakes, cinnamon, ginger, nutmeg, and salt. Use a spoon or spatula to mix these ingredients together. In a separate mixing bowl, add the brown sugar and canola oil and mix together using a spoon or spatula. Mix in the honey and vanilla extract to the brown sugar and canola oil mixture. Pour the brown sugar mixture onto the dry ingredients and mix everything together with a spoon or spatula. 

Line a baking sheet (about 12 x 18 inches) with parchment paper. Spread the granola evenly onto the parchment paper. Place the baking sheet in the preheated oven and bake the granola for 40-50 minutes. Take the baking sheet out of the oven about halfway through the baking time (around 20 minutes) and stir the granola to turn the bottom to the top to prevent burning. Place the sheet back into the oven and let the granola bake for the remaining time or until it turns golden brown. 

After the granola is done baking, take the baking sheet out of the oven and let the granola cool completely at room temperature; this usually takes about 30 minutes. The granola will clump together more when it cools down. After the granola has cooled, break it into pieces; the pieces can be as small or large as you like. After that, you’re done! Ingredients

Instructions

  • Take the baking sheet out of the oven after the granola is done baking and let the granola cool completely outside of the oven (this will take about 30 minutes)
  • Break the granola into desired pieces and store in a container with a lid for consumption
